Ingredients

Kale, chopped
1 Avocado, diced
1 small red onion, diced
1 can chick peas (garbanzo beans)
Extra Virgin Olive Oil
Minced Garlic
Honey
Lemon Juice
Red Pepper Flakes
Optional - Basil
Salt to taste
Tips
This salad tastes better to me the longer it has a chance to mix with all the ingredients! I served at a holiday pot luck - made it the night before, and it was great the next day. Doesn't get soggy as quickly with the dressing as a regular salad.
Directions
If you did not purchase chopped kale (I sometimes buy the Old Glory bagged, chopped kale), chop and remove stems.
Dice the avocado into small cubes and dice the onion. Mix kale, avocado, onion and can of chick peas in a large salad bowl.
Drizzle with olive oil, honey and lemon juice. You can adjust the amounts to your tastes. Sprinkle lightly with salt, minced garlic and red pepper flakes.
I don't like basil, but the original recipe included a sprinkling of fresh basil, too.
Mix well to coat ingredients with liquid and herbs, and serve!
