2 tsp. Oil
¼ tsp. Cumin Seeds
1/2 tsp. Mustard Seeds
2-3 Curry Leaves
2 small Green Chilies cut into ½” pieces (adjust to taste)
1/2 cup chopped onion
2 tsp chopped or grated ginger
1/2 cup chopped tomatoes
1/2 cup fresh Green Peas
1/2 cup chopped carrots
1/2 cup chopped brocoli
¼ tsp. Salt (adjust to taste)
1 cup Old Fashioned Oats
11/2 cup Water
Cilantro to garnish
Directions
1. dry roast the oats till they are light brown and keep aside.
2. Wash the green chilies and cut them. Wash & tear the curry leaves into two.
3. In sauce pan heat oil, add mustard & cumin seeds. When the seeds splutter, add curry leaves and green chilies and sauté for few seconds.
4. add the onion and saute till they are translucent.
Add the ginger, tomatoes, green peas, carrots and brocoli and continue to sauté for another 2-3 min.
5.Add salt, oats and saute for about a minute.
6. Add water and give a good stir and bring the water to a boil.
7. Mix well, reduce the heat to medium-medium high and continue to cook for few more minutes until water evaporates. After adding water, it takes approximately five minutes to cook.
8. Transfer oats to a serving bowl, sprinkle some cilantro and serve it hot.
