A vegetarian version of sausage and greens. A vegetarian version of sausage and greens.
Number of Servings: 4


    1 Bunch of Collard Greens, rinsed and sliced into thin strips
    4 Tofurkey Kielbasa Sausages, sliced into rounds
    1 Bell Pepper, diced
    1 Shallot, minced
    1 Clove Garlic, minced
    2 Tbsp Coconut Oil
    Spices to taste (no salt)


Rinse the veggies. Mince the shallots and garlic. Brown in the coconut oil. Slice the tofurkey sausage into rounds. Add to the pan to brown. Slice the collards into thin strips. Add to the pan and stir. Dice the bell pepper. Add to the pan. Add spices as desired. Stir until the collards are a dark green and the sausage has browned. Enjoy!
