    2 Tbsp Olive Oil
    1 large onion diced
    2 small potato chopped very small
    3 .5 cups water
    3 cups of broccoli chopped very small
    2 cups shredded swiss cheese
    .5 cup of heavy whipping cream
    Slalt & pepper to taste


Saute onion in olive oil about 5 minutes. Add potato and water bring to boiling. Reduced heat and simmer 7 minutes. Add broccoli and cook about another 7 minutes til broccoli is tender. Add Take out half of soup and puree in blended. Add back to stock pot. Add swiss cheese and whipping cream. Salt and pepper to taste. Heat on low about 15 minutes.Stir occassionally.
