Ingredients

    500g mushrooms
    2 medium onions
    2 medium tomatoes peeled and chopped
    200g tomato juice
    4-6 parsley sprigs
    salt
    pepper
    paprika
    oregano
    dried spearmint

Directions

1.Wash the mushrooms gently and process.
2.Chop and saute the onions.
3.Once the onions are transplascent, add the rest of the ingredients and cover with water.
4.Stir and reduce heat.
5.Boil for 15-20 minutes.

Serving Size: makes 2 1 cup servings.
