Ingredients

    1 package shredded cabbage/carrots (cole slaw mix)
    Almonds, 0.5 cup, sliced
    Sunflower Seeds, with salt added, 0.5 cup
    Balsamic Vinegar, 1/4 C (or red wine vinegar)
    Granulated Sugar, 1/4 cup
    Extra Virgin Olive Oil, 1/4 C
    Salt to taste


Tips

Works well to substitute Splenda for the sugar if eating fresh; however, the slaw will become soggy after one day and is not good for leftovers.


Directions

Mix together coleslaw mix, almonds, and sunflower seeds in a large bowl. In a separate small bowl, combine vinegar and sugar. Heat in microwave just enough to dissolve sugar. Add olive oil and whisk. Pour over coleslaw mix just before serving and toss.
