    4 medium sweet potatoes
    1 can black beans, rinsed
    2 medium tomatoes diced
    1 tbsp olive oil
    1 tsp cumin
    1 tsp coriander
    1/4 cup reduced fat sour cream
    salt as needed


Prick sweet potatoes with fork and microwave on high until tender, about 12 minutes.Meanwhile in a bowl combine beans,tomatoes,oil,and spices. Either heat in a suacepan or in the microwave. When cool enough to handle split potatoes and open to make a well in the center and spoon bean mixture in the well. Top with a dollop of sour cream
