This is my version of Pho. You can really do anything you want with it and make it your own. This is my version of Pho. You can really do anything you want with it and make it your own.
Number of Servings: 12


    2 small zucchinis, 2 small yellow squash, one full pkg of Maifun Rice Sticks (or any rice noodle you want), three packages of instant tofu miso soup (or miso paste to taste), four to six cups water, salt and pepper to taste, olive oil


Add seasonings for some more flavor. I added chopped onion and garlic to the veggies once and it was great.


Peel and dice zucchini and squash, heat up a skillet and sautee in olive oil. Add chopped up mushrooms, salt and pepper veggies to taste. Sautee for 6-10 minutes on medium to medium high heat. Add 4-6 cups of water to the instant tofu miso soup mixes in a pot. Add veggies and rice sticks (rice noodles) and salt and pepper soup to taste. Cover and simmer for 10 minutes until noodles are soft.

Serving Size: Makes 12-16 one cup servings
