    1/2 teaspoon sea salt
    1 Tablespoon Dijon Mustard
    1/4 teaspoon pepper
    1 Tablespoon Fresh Lemon Juice
    1 Whole Egg
    2 Egg Yolks
    1/2 Cup of Coconut Oil
    1/2 Cup of MCT Oil


I have added garlic powder and onion powder to make a garlic mayo. I've also added tabasco to make a spicy mayo. You can add different ingredients to the base mayo recipe to heighten the taste!
(I made chicken sliders on lettuce wraps with the spicy mayo).
*** NOTE*** MCT oil is made up of medium Chain Triglycerides (or MCT's) which are a type of fat that is more easily digested and more rapidly metabolized for energy than other types of fats. MCT's are naturally-occurring in coconut and palm kernel oils.


Place the eggs, mustard, lemon juice, salt, and pepper into a food processor or blender. Blend on low for a few seconds. While the blender is on low, start adding the coconut and MCT oil VERY SLOWLY. It should be a VERY small stream. This should take about 10 minutes to avoid breaking.

Serving Size: Makes 1 1/2 Cups
