    2 can (5oz) light tuna in water
    1 box Trader Joe's Cream of Portabello Soup
    3/4c Organic NF milk
    1/4 Chopped red bell pepper
    2 celery ribs chopped
    1/3 pkg frozen broccoli
    1/4 c chopped green onion w/greens
    1 tsp garlic powder
    1 tsp black pepper
    1 tsp cayanne
    1/8 oz shredded Dubliner irish cheddar
    1/8 oz shredded low fat swiss cheese
    11 oz pkg Organic Lundberg brown rice pasta


Preheat oven to 350
Cook pasta as directed on box. While pasta is cooking, combine all other ingredients in a cast iron casserole dish over medium heat. Once pasta is done add to tuna mix and combine. Remove from heat and place in oven uncovered.

You can lightly top the casserole with panko if you desire. Also, sprinkle with parmesan once removed from oven and let stand a couple minutes before serving.
