Introduction

This is a simple, flavorful soup that can tide you over in between meals, or used as a meal if adding tofu (not included in nutritional info) and a salad.
If you have kombu broth made ahead this dish is yours almost in the time it takes to heat the broth. If starting by creating the broth you will be done in 30 minutes.

Ingredients

    Kombu Broth:
    1 6 inch piece of Kombu
    8 C water

    Miso Soup -
    8 C kombu broth
    1 T soy sauce
    1 t sriracha sauce
    dash of white pepper
    3 heaping T miso (I like white miso for this)
    1 C thinly sliced mushrooms
    1 C fresh spinach, shredded
    3 green onions, sliced
    (dash of toasted sesame oil - not included in nutritional data)
    (cubed tofu)

Tips

Do NOT boil your soup once miso has been added - it should be heated gently. Boiling reduces some of the healthful properties of the miso.


Directions

To prepare kombu broth:
Bring 8 cups of water to a boil. Add the six inch strip of kombu, simmer for twenty minutes.

To prepare the soup:
Heat the kombu broth gently.
Whisk in miso, soy sauce, white pepper and sriracha.
Add in the sliced mushrooms, spinach and tofu if using.
Serve when heated through, topping with green onions (and a bit of toasted sesame oil if desired)
