    6 Empanada or Eggroll wrappers
    1 cup Cottage Cheese or Low Fat Ricotta
    1 cup Veggies of your choice, cooked and chopped
    .5 tsp Olive oil (optional)


Mix the cottage or ricotta cheese with the veggies. Place a small amount in the center of the dough -- empanadas are usually 6" circles so if using egg roll wrappers approximate, if using pizza dough, roll out and cut down.

Fold the dough and seal the edge like a pie crust. Brush each side of the empanada in olive oil and then bake at 350 until brown.
