    2 TBS olive oil
    1 1/2 cup chopped onion
    1 1/2 cup thinly-sliced or diced potatoes
    1 cup diced beets
    1 large carrot, sliced
    1 stalk celery, chopped
    3 cups cabbage, chopped
    4 cups water
    2 tsp salt
    1/4 tsp dill
    1 TBS and 1 tsp honey
    1 cup tomato puree (or unseasoned sauce)


Cook potatoes and beets together in water till tender, saving water. Saute onions in oil, add salt. Add celery, carrots, cabbage, and water from beets. Cook. Add potatoes and beets and seasonings. Simmer for 30 minutes. Serve with dark rye. Top with sour cream, dill, or chopped tomatoes (not in nutrition facts).
