Ingredients

    1 1/2 # quartered red skin potatoes
    low fat feta cheese
    low fat plain yogurt
    3 T fresh lemon juice
    roughly chopped parsley
    sea salt
    whole garlic cloves
    roasted red pepper
    ground black pepper to taste

Directions

Place potatoes and garlic into a medium pot and cover with cold water. Bring to boiling over high heat, add salt and cook until potatoes are tender - about 10 minutes
Remove from heat, drain water, return potatoes and garlic to pot. Mash with potato masher or fork. Fold in Remaining ingredients. Serve immediately.
