    14 oz of Salmon (about 2 filets)
    Pepper to taste
    1 Tbsp olive oil
    1/2 cup chopped onions
    1/4 cup chopped green bell pepper
    1/3 cup low sodium chicken broth
    1/3 cup red wine (or use red grape juice with a splash of cider vinegar)
    1 cup sliced mushrooms
    1/2 cup pearl onions
    1 tsp thyme


Season salmon with pepper to taste. Heat the oil in a large skillet and keep warm. Add onion and bell pepper to the skillet and saute until tender-crisp. Remove from skillet and keep warm. Add broth and wine to the skillet; bring to a boil, scraping up all of the browned bits from the bottom of the pan. Add mushrooms, then reduce heat, cover and simmer until mushrooms are reduced, about 5 minutes. Raise skillet heat to medium; add pearl onions and thyme; cook, uncovered, for about 5 minutes, or until sauce is reduced and almost all of the liquid is gone. Spoon bell peppers, mushrooms and onions over fish and serve.

Makes 4 (3 to 3.5 oz) servings.

Serving suggestion: add steamed red potatoes and steamed baby carrots.
