Number of Servings: 6


    2 boneless chicken breasts, cut into 1" chunks
    6 Johnsonville andouille sausages, cut into chunks
    2 tblsp. butter or margarine
    2 onions, peeled and chopped
    1/2 green pepper, chopped
    1/4 red pepper, chopped
    1 cup chicken broth
    2 cans Rotel tomatoes
    1/2 teaspoon each: salt, pepper, garlic powder, chili powder, cumin, red pepper flakes, parsley, oregano (or more according to your taste)
    1 tsp. Worcestershire sauce


melt butter over medium heat in a non-stick pot. add chicken, sausage, onion, celery, and green and red peppers. cook until onion becomes translucent. Add broth and tomatoes. Stir in spices and herbs. Add Worcestershire sauce. Bring to boil; turn heat to low and cover. Cook for 30 minutes.

Serving Size: makes 6 1-1/2 cup servings
