    1 large onion, chopped
    3 garlic cloves, minced
    2 jalapeno, diced
    1 large red pepper, diced
    12 oz extra lean ground beef
    1/2 teaspoon ground cumin
    1 tablespoon chili powder
    2 tablespoons paprika
    1 teaspoon crushed red pepper
    1/2 cup beef broth
    1 1/4 cup skim milk
    3 tablespoon cornstarch
    1 10-ounce can tomatoes with chiles, diced and drained
    1 3/4 cups reduced fat sharp Cheddar, shredded
    1/4 cup fresh cilantro, chopped
    juice of 1 lime


Whisk the cornstarch into 1/4 cup of milk, set aside.
In a large pan, cook the onion, garlic, red and jalapenos peppers, ground beef, cumin, chili powder, paprika, and crushed red pepper. Remove and set aside.
Add the milk and broth to the pan and bring it to a boil. After letting it boil for a few minutes, add the cornstarch and milk mixture. After it comes back to a boil, reduce the heat. Add the meat mixture, canned tomatoes, cheese, cilantro and lime juice to the pan. Let it simmer, constantly stirring, until it reaches your desired thickness.
