Introduction

A slightly healthier version of my Grandma's 'old world' recipe. I'm serving with boiled potatoes and carrots instead of noodles or traditional chewy dumplings to save on calories. Number of Servings: 8

Ingredients

    1 tablespoon canola oil
    1/2 cup onion
    1 tablespoon Hungarian paprika
    1 tsp salt
    .5 tsp ground black pepperup
    4 cups chicken off the bone - no skin
    1/2 cup chicken broth
    1 cup lowfat sour cream
    3 tablespoons all purpose flour


Directions

Fry onion in oil. Add chicken (if raw) and brown on both sides. Sprinkle paprika, salt, and pepper on top. Add broth. Cook for 20 minutes, covered on medium heat. Remove chicken from pan. Mix flour into sour cream. Add to pan. Stir until thickened. Add chicken back to pan to warm.

Serving Size: Makes 8 one-cup servings
