Number of Servings: 12


    1.5 cups flour
    1.5 tsps baking soda
    dash salt
    ground black pepper
    3-4tsps Splenda
    1 medium fresh egg
    1 cup Calcitrim milk
    1/2 cup grated carrot
    tbsp chopped chives
    100gms grated Edam cheese (1 cup)
    100gms finely diced Turkey breast meat


Could use leftover Christmas Ham in these instead of turkey.


1. Preheat oven to 210C.
2. Measure all dry ingredients into large mixing bowl. Sift in and stir all together.
3. Add in the grated cheese, chives, grated carrot and finely chopped turkey breast meat. Stir together.
4. Beat together egg, and milk.
5. Add to other ingredients. Fold in together, taking care not to over-mix.
6. Spoon mixture into muffin cases.
7. Bake in 210C/400F for about 15 minutes, or until golden on top and springing back in the middle.


Serving Size: Makes 12 medium sized muffins
