Ingredients

I can vegan refried beans (I use Old El Paso Vegetarian Refried Beans)
1 medium onion, diced
3 cloves of garlic, minced
1 jar of your favorite thick salsa
8 tsp of taco seasoning (I use McCormick's 30% less sodium packet, sometimes even the chili seasonings, or you can create your own seasoning mixture to taste)
1 tbsp extra virgin olive oil
1 cup of corn kernels (frozen, or drained from a can)
1 package (10 oz) spinach or other veggies
Tips
This tastes good inside of burritos as well as enchiladas! Feel free to add any veggies you would like, as well as to season it to your taste!
Directions
1. Sauté onions and garlic in olive oil in medium sauce pan over medium heat until onions are translucent.
2. Add jar of salsa, can of refried beans, and seasoning mix. Stir well.
3. Stir in corn, and spinach handful by handful.
4. Reduce heat to low and allow to simmer. Stir frequently until spinach is thoroughly wilted.
5. Allow to simmer until mixture thickens, stirring often.
