    4 Eggs
    1/4 cup Skim Milk
    1/2 tsp Dried Parsley
    1/4 cup shredded cheddar cheese
    1/2 cup sun dried tomatoes (dry -not oil packed and sliced)


Boil water. Place tomatoes in a bowl and pour boiling water over them until they are soft (approx. 3 min).

Beat eggs and milk together. Place eggs into a greased skillet (pam, butter, etc.). Add tomato, cheese, and parsley. Scramble until done.
