Ingredients

    Ingredients (serves 6)

    1 green bell pepper, chopped
    1 medium onion, chopped
    3 celery stalks, chopped
    3 garlic cloves, minced
    14 oz andouille sausage, sliced
    3 tablespoons Creole seasoning
    1 lb dried kidney beans
    7 cups water
    white rice




Tips

Remove the lid partway for the last 30 minutes to allow the sauce to thicken slightly. Serve over cooked white rice.


Directions

Place first 8 ingredients into a 4-quart crock pot and cook on high for 7.5 hours.
