Ingredients

    1 Large or 2 medium sweet potatos
    1 Large or 2 medium white potatos (could use red if you prefer)
    1 medium yellow onion
    Olive Oil cooking spray

Directions

spray bottom of 9x13 cooking pan with olive oil cooking spray
peel all potatos, cube (1" cubes cook faster...)
slice onion (to your desired size)
single layer in pan
season to taste (sea salt, pepper, paprika)
spray top
cook at 425 degrees for 30 minutes until soft and brown

    Good
    I did not have white potatoes so used one huge sweet potato. I added green pepper, carrots and grape tomatoes. I will try again mixing up the spices a bit. - 6/11/09

    Very Good
    I do want to make this again, but it needs to be crispy or something. Also - what did I do? My sweet potatoes turned a bit bluish! I've heard that happen to other people but I don't know what causes it. - 3/11/08
