    6 cups shredded coleslaw mix
    1 1/4 lbs. lean ground pork
    1 cup chopped bok choy leaves or fresh spinach
    1 cup chopped sweet red peppers
    1/2 cup finely chopped onion
    1/2 cup finely chopped celery
    1/4 cup finely chopped green onions
    2 TBSP. red miso (bean paste)
    1/2 tsp. salt
    1/4 tsp. black pepper
    4 cups chicken broth
    1/4 cup low sodum soy sauce
    3 TBSP. tomato paste
    2 TBSP. sake or dry sherry
    1 TBSP rice vinegar
    1 tsp. dried crushed thyme


Coat slow cooker with cooking spray. In large bowl combine slaw, pork, bok choy, red peppers, onions, celery, green onion, miso, salt and pepper. Put in slow cooker.

Whisk together broth, soy sauce, tomato paste, sake, vinegar and thyme. Pour over Pork mixture. Stir to combine.

Cover and cook on low heat for 6 hours or high heat for 3 hours.

Serving Size: Makes 8 Servings
