Number of Servings: 6


    2 beets, roasted and cut into small pieces
    2 oranges, sectioned and cut into small bites
    4 c spinach, cut into small bites

    1 T. Grapeseed oil
    1 t. Lemon juice
    1/2 t. Salt
    1/4 t. Dry mustard

    1/2 c pecans, chopped
    1/2 c. Feta cheese, crumbled
    2T. Fresh mint, finely sliced


1. Whisk oil, juice, salt and mustard together in a large bowl.

2. Add spinach to bowl and stir to coat with dressing.

3. In serving dish, or on individual serving plates, layer spinach, beets, oranges, cheese, pecans and mint.
