Ingredients

    4 baked potato skins, (baked and interior flesh removed, cut into quarters)
    1 cup reduced fat shredded sharp cheddar cheese
    4 slices of cooked bacon (crisp)
    1/4 cup diced tomato
    4 Tablespoons light sour cream

Directions

Bake potatoes in oven for 1 hour. Cut in half and scoop out flesh, reserve for use in other recipes. Cut each half in half (4 pieces of potato skin per potato). Sprinkle on cheddar cheese, crushed bacon bits, and diced tomato. Bake on cookie sheet in 400 degree oven for 15 minutes or until cheese browns. Dollop sour cream on each skin and serve.
