Introduction

Ingredients

    1 tbsp olive evoo
    1 large can of petitie diced tomatoes
    1 large purple onion sliced thin
    1/2 cup good red wine
    sea salt and fresh ground pepper
    1 1/2 tsp herbs de provence
    4 - 3 oz lean pork loin cutlets




Directions

Heat large saute pan. Add cold oil, then add salt and peppered cutlets. Brown on high on both sides. Remove from pan and set aside. To hot pan, add onions, cook until soft, about 3-4 minutes. Add entire can of tomatoes and wine. Add herbs de provence. Cook covered for about 10 minutes until sauce thickens a bit. Stir sauce. Add pork cutlets back in and cook covered for about 10-15 more minutes. Sooooo good!
