    10g Olive Oil
    250g dried lentils*
    75g onion, diced
    40g carrots, diced
    40g celery, diced
    200g canned crushed tomatoes
    1L water
    salt & pepper to taste


*if you soak the lentils (after weighing them) at least 1 hour, or overnight, the cook time will be much shorter.


Heat medium sized pot, add all ingredients except water. Cook 5 mins over medium heat, stirring occasionally. Add the water and cook, stirring occasionally until lentils are tender (some types of lentils are larger than others so the exact cook time will depend on your lentil choice).You can add vegetable (or chicken or meat) broth instead of water for fuller flavor. Season with salt & pepper to taste. This can be pureed into a nice soup (add more water or broth) or served as a side dish or first course.
