Ingredients

    1/4 cup chopped zucchini
    1/4 cup chopped onion
    4 cups baby spinach
    1-1/2 cup egg substitute
    1/2 cup shredded cheese

Directions

Spray pan with cooking spray and cook zucchini, onion until soft. Add spinach and cook until wilted and incorprated into other vegies. Add egg substitute, Spread cheese evenly on top and cover and cook on lowest heat until mixture is firm and done. Cut into fourths and serve.
