    3-4 large boneless skinless chicken breast, cut in half length-wise
    1 can quartered artichoke hearts
    1 can diced tomatoes
    1 tsps ugar
    2 Tbs flour
    generous pinches of salt and pepper
    2 Tbs olive oil
    1/2 c shredded mozzarella cheese
    1/4 c parmesean cheese
    1 tsp italian seasoning
    a few leaves basil, torn or chopped


Season chicken with salt and pepper, place in 9x13in baking dish.

In a bowl mix together artichokes, tomatoes, garlic, olive oil, flour, sugar, a pinch of salt and pepper and italian seasoning,

pour over chicken. Bake at 35 deg for 20-35 min (depends on thickness of chicken).

Sprinkle with basil and cheese and place under broiler for few min until cheese bubbly.

Serving Size: makes 4 dinner sized portions
