Introduction

Ingredients

    3/4 lb raw shrimp, peeled and deveined (save the shells)
    4 c chicken broth (low fat)
    2 T olive oil
    1 c chopped onion or leek
    1 T chopped garlic
    pinch cayenne pepper
    1/4 c cognac or brandy
    2 T butter
    1/4 c flour
    2 c 1% milk
    1/3 c tomato paste
    2 t kosher salt
    1 t pepper

Directions

1. Simmer shrimp shells in chicken stock for 15 minutes.
2. Meanwhile, heat olive oil in a Dutch Oven or large pot. Cook onions or leeks in the oil until tender but not browned. Add garlic and cook one more minute, then add shrimp and cayenne and cook 3 minutes. Add cognac or brandy and cook three more minutes. Remove from heat and puree in a blender or food processor.
3. In the same pot, melt the butter and add the flour. Cook for one minute and remove from heat. Add milk slowly, whisking it in so it forms a smooth mixture. Resume heating and cook for 3 minutes, until thickened.
4. Stir in pureed shrimp mixture, stock, tomato paste, salt and pepper. Heat through but don't boil.
