Ingredients

    Egg, fresh, 8 large
    Milk, 2%, .5 cup
    *Pork Sausage, 4 patties
    Bacon, 3 medium slices
    3 Scallions, chopped
    1 Green Pepper, chopped
    Spinach, fresh, 1 bunch
    1 cup cheddar cheese

Directions

brown sausage on a frying pan, add chopped pepper and scallion. Add spinach until wilted. Chop up bacon and add to pan. Place contents of frying pan into an 9x13 baking dish that has been sprayed with cooking spray. Beat eggs and milk together, pour into baking dish. Sprinkle cheese on top. Bake in a 350 degree oven for 30 minutes.
