    2.25 cups flour
    0.5 cup brown sugar blend splenda
    2 tsp baking powder
    1 tsp baking soda

    100 ml egg substitute
    70 ml canola oil
    1 tsp vanilla

    0.5 cup oat bran
    1.5 cups shredded zucchini
    1 tsp cinnamon
    1 tsp ginger

    1.25 cups low fat buttermilk

    1 cup raisins


Makes 12 large muffins
Heat oven to 375F

Stir together first 4 ingredients
In separate bowl, mix together next 3 ingredients and add to above.
Mix together next 4 ingredients and add to above mixture.
Add buttermilk and then washed raisins.
Divide into 12 muffin cups.
Bake for 20 minutes.
Cool and eat
