    24 Lowfat vanilla wafers
    15 oz. Neufchatel Cheese at room temperature
    1/4 C. Sugar
    1/4 C. Splenda for baking1/2 tsp. Vanilla
    1 large Egg
    1/4 C. Egg Beaters or other egg substitute
    12 Tbsp. Sugarfree Strawberry Jam
    Rind from 1 whole lemon grated
    24 mini foil muffin liners
    24 mini muffin tins


If any cheesecake mixture is left over, repeat step 3. again.


1. Preheat oven to 350* F. Line muffin tins with foil liners. Place a vnilla wafer in the bottem of each cupcake paper.

2. In mixing bowl, beat cream cheese, sugar and vanilla til well mixed. Add egg and egg substitute and beat until smooth.

3. Divide cheesecake mixture evenly between the 24 muffin tins. Bake fro 15-20 minutes or until centers are almost set. Cool. Refrigerate 2 hours or overnight.

4. When ready to serve place 1/2 Tbsp jam on top of each cheesecake.
