Ingredients

    Cube Eggplant, chicken, onion,and tofu
    Slice mushrooms
    Slice thin strips carrots, red pepper, peapods
    chop garlic






Tips

Make sure to drain before adding sprouts, sesame oil, and oyster sauce. Mixture will be watery and taste bland

Directions: About 2 minutes each
Add olive oil, chicken, garlic to a large pan, saute for a few minutes to slightly cook, then
Add eggplant, onions and carrots. Saute a few minutes,

Drain entire mixture Return to pan.

Then add oyster sauce and sesame oil, and bean sprouts.

Cover for a few minutes then serve. Makes approximately 3 (2 cup each) servings
