    1 chopped onion
    1 tbsp oil
    13 1/2 oz canned crushed tomatoes
    6 cups of vegetable or chicken stock


If you don't have vegtable stock you can use chicken. Either or is good.


Bring to the boil; reduce the heat and simmer for 20 minutes, then stir in some chopped basil and serve topped with a small dollop of sour cream.
