I wanted an alternative to typical "sausage" recipes. So this is a very tasty, vegan, easy recipe to make! I wanted an alternative to typical "sausage" recipes. So this is a very tasty, vegan, easy recipe to make!
Number of Servings: 4


    I lb equivalent of vegan sausage (I use Light Life Gimme Lean Ground Sausage)
    1 lb potatoes (about 4 medium), cut into bite pieces
    1/3 cup dijon mustard
    2 tablespoons extra virgin olive oil, divided
    1 tablespoon lemon juice
    1 tablespoon balsamic vinegar
    3 cloves of garlic, minced
    .5 tsp kosher salt (I substituted 1 tsp sea salt)
    .25 tsp ground pepper, or more to taste


You can add some additional spices if you like -- rosemary, oregano, etc!


1. Preheat oven to 425 degrees. Prepare 2 cookie/ baking sheets covering them with foil and spraying with non-stick cooking spray.
2. Whisk mustard, 1 tablespoon extra virgin olive oil, lemon juice, balsamic vinegar, garlic and salt in a large bowl.
3. Add potatoes and pepper (more to taste) and stir to coat potatoes evenly.
4. Place potatoes in a single layer on 1 of the prepared foil covered, cooking spray coated baking sheets. Leave excess mustard mixture in bowl and set bowl aside.
5. Put potatoes in oven. Roast potatoes for about 45 minutes at 425 degrees, turning 1/2 way during cooking, until potatoes are crusty on outside and tender on inside.
6. While potatoes are roasting, sauté vegan sausage in 1 tablespoon of olive oil until browned and fully cooked, or prepare as directed on package.
7. Pour cooked sausage into bowl with remaining mustard mixture, and thoroughly mix.
8. Spread sausage on 2nd foiled lined, cooking spray coated baking sheet. Put the sausage mixture in the oven for the last 15 minutes that the potatoes are roasting.
9. Remove both baking sheets from the oven, combine sausage and potatoes, toss, serve and enjoy!
