Number of Servings: 10


    2 TBS Oil
    1 Yellow Onion, diced small
    4 Garlic Cloves or 2 TBS minced garlic
    6.5 cups water
    3 stalks of Celery, sliced
    1 cup diced roasted red pepper
    1 1/2 cups Red Lentils
    2 Sweet Potatoes diced
    1/2 cup Cilantro minced
    1 tsp red wine vinegar
    1/4 cup Sun-dried tomatoes diced
    Ground Red Pepper, Course Salt, and Fresh Ground Pepper to taste


Heat Oil over medium heat.

Saute Onion for 5 minutes. Add Garlic and continue for 1 minute.

In a large lidded pot, combine sauted onions and garlic, water, celery, roasted red pepper, red lentils, sweet potatoes, cilantro, red wine vinegar, and sun dried tomatoes. Bring to a boil. Cover, slightly lower temperature, and allow to cook for 30 minutes stirring occasionally.

Salt, Pepper, and Red Pepper to taste. Enjoy!
