    1 package Mushrooms
    1 medium red onion chopped
    3 stalks celery sliced
    3 stalks carrot sliced
    2 red bell pepper chopped
    1 green bell pepper chopped
    8 cups beef broth
    2 zucchinis cubed
    1 Tb garlic poweder
    1 Tb spicy steak seasoning
    1 tsp oil
    1lbs Lean steak chopped


Don't skip on the browning parts. They add incredible flavor that is needed when cooking with leaner ingredients.


In a soup pot heat the one tsp oil and add the mushrooms and saute till browned. Add onion celery and carrots and bell pepper saute 5 minutes till slightly browned. Add beef broth and steak seasoning. In a skillet brown the steak add it to the soup pot. Take a bit of the soup liquid and scraped down the brown bits off the skillet and add them to the soup. Add chopped zuccini and cook till zuccini is tender. About 20 minutes.

Serving Size: makes 8 2.5 cup servings
