    Mushrooms, fresh, 0.5 cup, chopped
    Egg, fresh, 1 large
    Egg white, fresh, 3
    Water, 2 tbsp
    Salt to taste
    Black pepper to taste
    Cooking spray

Cook mushrooms in an omelete pan with cooking spray until just beginning to brown. Whisk the egg, egg whites, water, salt and pepper together in a bowl and add to the pan, stirring continuously until set. Finish under a hot grill.
