Ingredients

    2 large celery stalks, diced
    10 small mushrooms, sliced
    3 medium carrots, sliced
1/3 of a butternut squash, peeled and sliced (approximately 2 cups)
1 cup low sodium chicken broth
    1 cup of water
1/2 Turkey Breast, bone in, skin on
    4 T. unsalted butter
    approximately 3 T. poultry seasoning

Tips

I forgot to add onion this time, but I would probably add half an onion, sliced, next time around.

Directions

Layer veggies on the bottom of a 4-5 quart crock pot. Place turkey breast on top of veggies, pressing down, if necessary, to get it in. Pour the chicken broth and water into the crock pot. Slice the butter into 4 pieces and place under the skin and/or on top of the turkey breast. Sprinkle liberally with poultry seasoning. Place lid on crockpot.

Cook on high for 1-2 hours, then cook on low for another 2 hours, or until turkey is cooked through.

Serving Size: Makes approximately 4 servings.
