I found this recipe on another site and modified it to make it low fat. You can add any veggies and seasonings you like with you eggs. It is like an omellette in a muffin tin. Number of Servings: 18

Ingredients

    4 eggs
    500ml egg whites
    green onions, diced
    mushrooms, chopped
    low fat mozarella cheese, shredded (about 100 grams, a wee bit in each muffin cup)

Directions

Preheat oven to 375
Line muffin tin with liners, spray with pam. Mix the eggs and egg whites together with whatever seasoning you like. Place mushrooms, onions and cheese in each tin cup (any other veggies you opt for) and fill the muffin cups 2/3 and bake for anout 25 minutes

Serving Size: makes 18 "muffins"
