Number of Servings: 6


    1 lb left over leg of lamb (cut in small/med chunks)
    2 cups cubed potato
    2 medium carrots sliced
    6 slices of bacon
    2.5 medium onions - chopped
    4 gloves of garlic chopped
    1 can Guiness Stout (about 15 oz)
    2 cups low sodium beef stock
    1/2 cup flour for dredging
    2 tsp salt (mixed with flour)
    2 tsp black pepper (mixed with flour


1) Cooked the bacon - blot away grease
2) Sauted the onion, garlic with the bacon until tranlucent
3) Add lamb (chopped, dredged in flour, salt, pepper) and browned
4) Add beef stock and stout
(Pete insisted that one of the steps is to add one can of stout to the Cook)
5) Stir and simmer in covered pot for 2 hours
6) Add carrots and potatoes, cook an additional 30 minutes or until veggies are done to your liking.

Serving Size: 6 1-cup servings
