    -6 boneless, skinless chicken breast tenderloins
    -Whole Wheat Flour, 0.5 cup
    -egg white w/ 1 tbsp. water added 2 large
    -4C Panko Seasoned Bread Crumbs, 1.5 cup mixed with Parmesan Cheese, grated, .25 cup
    -Tomato Sauce, 1.25 cup
    -Olive Oil, 1 tbsp
    -Mozzarella Fat Free Shredded Cheese, 1 cup
    -Italian seasonings to taste


*Serve alone, with salad, or with pasta.

*I usually line my baking sheet with foil so there is less mess to clean up.


-Preheat Oven to 400.
-Pound tenderloins to 1/4 inch thickness
-dredge each in flour
-dredge each in egg white and water mixture
-coat each in panko mixed with parmesan
-place on baking sheet sprayed with cooking spray
-bake 10-15 minutes until panko starts to brown, meanwhile mix olive oil, seasonings, and tomato sauce and heat on low or until simmering
-remove baking sheet from oven and place approximately 3 tbsp. of sauce mixture on top of each piece of chicken
-top with mozzarella and return to oven
-bake an additional 5-10 minutes until cheese is melted and golden
