    1 Tb Olive Oil
    1/2 cup brown rice
    1 1/2 cup water
    1 tsp curry powder
    6 cups vegetable broth
    1 cup moong dal (split mung beans, can substitute red lentils)
    1 lemon
    1 pinch saffron threads
    salt to taste


heat olive oil in pot on medium heat, add brown rice and curry powder, stirring frequently until curry powder is fragrant (about 1 minute). Add water, bring to a boil and cover. Switch to low heat, cook 15 minutes, then turn off heat and let steam another 15 minutes. Pour rice into a bowl, set aside.

In same pot, add broth and heat till boiling. Add moong dal and cook till tender (about 15 minutes). Blend using an immersion blender or standing blender. In the cooking pot, add lemon, saffron and salt to taste. Cook till creamy consistency, add rice,
stir and serve.

Serving Size: makes four 1.5 cup servings
