    1/3 c- Butter
    1/3 c- Flour

    1/2 Yellow Onion

    1/2 c- Milk
    1 3/4 c- chicken broth
    1/2 tsp- Salt
    1/4 tsp- pepper

    1 bag mixed vegetables- thawed
    Roasting chicken- remove skin and bones- into bite size bits

    1 package pillsbury croissants


If mixture seems too thick, add more broth. If too thin, add more flour.


Pre-heat oven to 350 degrees F.

Melt butter in 2 qt. pan on Medium heat. Add onion and cook 2-3 minutes. Stir in flour until combined.

Stir in milk and broth slowly. Add pepper and salt. Stir occasionally until mixture turns thick and bubbly.

Add rotisserie chicken and thawed veggies. Heat through.

Use non-stick cooking spray on a 9x13 pan. Pour mixture into pan. Top with croissants, leave them in "sheet" form (it'll take about 6 triangles).

Place into oven, cook for 13-16 minutes or until croissant crust is lightly browned.

Let cool for 15 minutes. Divide each crossiant triangle in 1/2 and this gives you 12 servings. Enjoy!
