    Chicken Breast (cooked), no skin, 16 ounces
    Onions, raw, .25 cup, chopped
    Garlic, 4 cloves
    Penne Pasta, cooked, 14 oz
    Artichokes, frozen, 14 oz
    Olive Oil, 1 tbsp
    Parsley, dried, 3 tbsp
    Bella Sun Luci- Sundried Tomatoes, 8 oz
    Parmasean 2 tbsp, 2 serving
    Fresh Chives, 2 tbsp chopped
    Mozzarella Cheese, part skim milk, 12 oz


I usually split this up into 2 pans and cook one on a different date. The recipe will freeze well


Heat oven to 400 degrees
Heat Onions, olive oil and garlic in a pan
Dice chicken and cook thoroughly with onions and garlic
Mix all ingredients except mozzarella in a pan
Top with Mozzarella
Cook covered with foil for 1 hour
Remove foil and cook for a remaining 10-15 minutes until the cheese is golden

Serving Size: Makes 8 1 cup servings
