    Lentils, 3 cup
    Vegetable Broth, 3 cup
    Feta Cheese, 1 cup, crumbled
    *Peppers, sweet, red, fresh, 4 small
    Red Ripe Tomatoes, 1 cup cherry tomatoes
    Olive Oil, 2 tbsp
    Onions, raw, .5 medium (2-1/2" dia)
    Garlic, 4 cloves
    Celery, raw, 2 stalk, large (11"-12" long)


Makes 6 servings

Boil lentils in veggie broth
Roast garlic, peppers and onions seperately *if you have a gas range put them on a kabob stick and roast them over the flame. If not, use a grill*
When lentils are done to your liking make sure there's not too much broth left and transfer to a large bowl.
Chop all veggies and sautee in olive oil in large pan. When slightly cooked add to bowl.
Add feta
Season with any herbs and spices you like.
Toss in the bowl until well mixed. Serve.
