    1 TBSP olive oil
    2 lbs. lean pork loin cut into 1" cubes
    1 TBSP flour
    1/2 tsp. salt
    1/2 tsp. pepper
    2 medium onions chopped
    2 TBSP. garlic
    3/4 cup dry red wine (Cabernet Sauvignon or Pinot Noir)
    2 TBSP tomato paste
    2 cups chicken broth
    3 bay leaves
    1 tsp. thyme
    6 baby red potatoes cut into 1/2" pieces
    2 cups sliced carrots
    1 cup frozen peas


Heat 1/2 TBSP oil in large skillet over med-high heat. Combine flour, salt and pepper in large ziploc bag. Add pork and toss to lightly coat. Working in two batches to avoid crowding in the pan, sear the pork in the hot oil, turning occasionally until nicely browned. Transfer to a slow cooker coated with cooking spray.

Add the reamining oil to the skillet. Add the chopped onions and cook for about 5 minutes, until lightly browned. Stir in the wine, garlic and tomato paste, scraping the bottom of the pan to free up any browned bits. Pour the onion mixture over the pork, then add the carrots, potatoes, broth, bay leaves and thyme. Set the slow cooker to high, cover and cook for 4 hours (or on low for 8 hours), until the pork is fork-tender.

Five minutes before serving add the peas. Discard the bay leaves and season with salt and pepper.
