Ingredients

    1 Medium onion, diced
    4 Stalks celery, diced
    2 Tbsp Butter
    1 Tbsp Olive Oil
    Cracked Pepper
    1-2 cloves fresh crushed garlic
    4 Potatoes, peeled and diced
    3 tsp chicken boullion
    1tsp worcheshire
    1 tsp dijon mustard
    1 can Budweiser or other beer
    1 cup cubed Velveeta
    1 cup shredded or cubed pepper jack cheese
    1 cup shredded sharp cheddar

Tips

Experiment with cheeses to your liking. Budweiser is most flavorful, but feel free to use whatever beer you like.


Directions

Saute onions and celery in butter and olive oil until softened. Peel & cube potatoes, boil until softened. Reserve 2 c liquid, add chicken bouillion to this. Set cooked potatoes aside. To the onions, stir in flour. Season with pepper and fresh garlic. Add chicken stock, let simmer and thicken on Med-Low. Add 1 can of beer and 1-1/2 cups of milk, 1 tsp worcheshire, 1 tsp dijon mustard, along with the cheeses. Let simmer on Low until thickened and cheese is all melted. Add potatoes. Serve topped with bacon bits or popcorn.
